Rounding up on your beachstarts is a common problem, but also one of the easiest things for a novice windsurfer to correct.
The reason most beginners round up when learning to beachstart is that they don't tilt the rig to windward far enough when flying the sail. Tilting the sail to windward drives the nose of the board downwind and coaxes the tail to come closer to your body.

Next time you're on the water working on this maneuver, instead of just trying to lift the sail straight up with both hands on the boom, tilt it to windward as you lift. Not only will the board position itself better, but it will also make the sail feel lighter.

After you have the sail in the proper position, you can get control of the board by placing your back foot on the deck and pulling the board to you. Try to keep the rig stationary and just pull the board close to you with your rear foot. You can also bend the back knee and drive it forward toward the mast instead of letting the knee fall back toward the stern.

Then, as you begin to step up onto the board, start sheeting in the sail by pulling down on the boom. This actually puts pressure through the rig and onto the nose of the board, helping to keep it from rounding up.
